Samp, I just bring it to a rapid boil again, stir once, and then cover and turn it off.
Phil, it should work the same for large amounts too, its all about the heat that already exists in the pot.

That meat loaf sounds good. Can you really mix lamb, veal, and beef? I mean, it's not an abomination or something?

I don't have any qualms about eating meat...in fact, I really like a lot of it...but I'd never eat veal. Not only is veal the meat from a young calf, but the calves are kept in restricted (read "caged") environments so that they can get no exercise and are purposely kept underfed to ensure that hey don't get too much flesh on their bones. You don't have to be a fanatical Peta protester to find that cruel and inhumane.
Otherwise, pass me the Heinz 57...this sirloin is TASTY!

Skip me on the veal too, simply because IMO it tastes bad. I never could understand all the gastronomic fuss over it.
