Before meeting "better-half", I lived in a large two storey appt. with a Chef(South of France), one head waiter(Sicilian) and a barman(Spanish) just above our favorite bar (same owner)
Every Monday(usual day-off in the restaurant business) we used to prepare real fancy meals invite a few other guys and stuff our faces ... !!
It was called le "Club de la braguette" (Cod Piece Club) because no woman were allowed ...

"Raw" fish (as in cooked in a marinade is the best)
Sushi I won't bother make at home but will pay ourselves a treat in a fine Japanese resto.
Salmon - shrimps - scallops - white fish all are good to make seviche or sashimi ...
Sashimi
2 pounds fish fillets 2 cups lemon juice 1/4 cup soy sauce 1/2 cup thinly sliced onions 1/4 teaspoon white pepper 1 teaspoon salt
Remove the skin from fillets and slice 1/8 inch thick. Mix the other ingredients and pour over the fillets which have beend placed in a glass bowl or platter. Let it marinate overnight.
Ecuadorean Seviche
Ecuadoreans usually combine three citrus juices plus vinegar in their seviche.
2 pounds whitefish juice of 6 limes, 3 lemons, 3 sour oranges, or enough to make 2 cups juice 4 teaspoons salt 3/4 teaspoons black pepper 1/4 cup vinegar 2 medium onions sliced very thin 2 or 3 red or yellow hot peppers, slivered
cut fish into bite size pieces and place in a bowl. Pour juice over it. Add salt and pepper and vinegar. Let stand about 6 hours in refrigerator. Pour boiling water over the onions and drain. Add to the fish. Add slivered hot peppers and let set overnight.

Marinated sashimi is actually pretty damn good. Great mix of Japanese and Western culinary cultures.
My family used to have temazkizushi (hand-rolled sushi) parties when I was a kid. We didn't make anything exotic, and the sushi was limited to the most ordinary stuff (raw tuna, squid, natto or fermented beans, cucumbers), but it was pretty fun.

I never could get into raw meat of any sort myself & since my fish eating is limited to tuna I can be counted out. NE: (now eating) the simplest yet most delicious breakfast. Whole grain bagel w Hungarian salami & sprouts. Yummy.

While I was peeling my 12 or 13 potato, I made the comment , "I will have peeled a lot of potatoes in my life"
Then I heard "Better-Half" who was doing a crossword puzzle in the other room ...
"Not me", she said ... Then she started laughing !!
Good thing she was not in my line of sight she would have been hit with a naked spud !!

Ryo ~ You're in trouble, man ! Huh? Why? Actually though, I've only ever had raw horsemeat on two occasions. It was pretty good the first time, but the second time was kind of yucky. Both were at cheap bars though, so I'd imagine that it would taste uber-delicious if I had them at one of the finer restaurants. As for other types of raw red meat, I always order yuke (raw beef with raw eggs) when I go to a Korean joint. One of my favorite Korean dishes. Those Koreans know how to eat meat, don't they?
